These recipes are gluten, egg, dairy, and peanut/treenut free!


Rice Trixie Treats
3 cups GF rice crisp cereal
2 cups GF marshmallows (I like Kroger brand)
2 tbsp GF/DF margarine (I like Smart balance LIGHT)
PAM Spray (it's GF/DF/EF!! Except butter flavor)

First spray everything with PAM! The micro bowl, the mixing bowl, your mixing spoon, the brownie pan, and the spatula
Pour rice cereal in mixing bowl
Heat marshmallows and margarine in same bowl in micro for 45 seconds, stir
Repeat for another 15 sec if needed... don't over do it
Pour marshmallow mixture over rice cereal
Mix and fold
Evenly spread mixture in brownie pan and pat down with spatula until level and even
Refrigerate for 30 min before serving

Goldmine Bars
Use recipe above with the following exceptions:
1. Add 1/2 cup Sunbutter spread (sunflower seed butter, a great peanut butter substitute!) to the marshmallow/margarine mix and then micro

2. Once the rice trixie treats are in the brownie pan, pour chocolate over the top and spread evenly.  Refrigerate for about 1 hour with chocolate topping.
   - Chocolate: 1 bag Ghirardelli semi-sweet choco chips; melt on stove using double boil method

Sweet Potato Bake
2 sweet potatoes, 1 yam - mashed
3 tbsp GF/DF margarine (I like Earth Balance, Whipped)
1/4 c brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1 c GF mini marshmallows (I like Kroger brand)

Preheat oven to 350 degrees
Mix all ingredients, except marshmallows
Put mixture in oven-safe, greased bowl, or deep pan
Bake for 30 min, then take out
Spread marshmallows evenly on top
Bake for another 15 min, or until marshmallows are browned
